Recipe of the Week

Heres Gerry Cohn’s information on the sweet potatoes he has been so kind to provide for us. Yum!

 

Matzah Rising Farm grew two varieties of Sweet Potato organically in Snow Camp this year.

1. Beauregard -- Red-orange skin and orange flesh. Sweet and silky.

2. Japanese Sweet Potato (satsuma-imo) has a beautiful pink to purple skin and is white inside.  It has a delicious sweet chestnut-like flavor.  They are used to make liquor in Japan.  They are attractive, colorful, and make a wonderful presentation.  They can be grilled, steamed or baked. They’re smaller than the Beauregard and take slightly longer to cook.

 

Japanese Sweet Potato Cake Recipe

INGREDIENTS:

  • 2 small satsuma-imo (sweet potato/yam)
  • 1 egg yolk
  • 2 tbsp butter
  • 1 tbsp milk
  • 2 1/2 tbsps sugar

PREPARATION:

Steam satsuma-imo until softened. Peel satsuma-imo skin and mash the satsuma-imo in a bowl. Add butter, egg yolk (leave some for glazing), sugar, and milk in the bowl. Stir the ingredients well. Make small oval-shaped sweet potato cakes and put each cake on an aluminium cup. Mix some water and left-over egg yolk in a small cup. Glaze cakes with the egg mixture. Place cakes on a tray and bake in 375 F oven for 10-15 min. *Makes 4 servings

Fresh Chicken?

We had to take them up to Virginia this week.  Depending on whether or not the processor has them ready by Thursday morning, we may or may not have chickens for our RTI folks on Thursday.  Check out our price list and let us know if you need anything!  If we have it, we’ll bring it!  If not, come to Carrboro Farmers’ Market this Saturday!

 

FREE BACKS!

We are offering free chicken backs to any of our members who have the freezer space.  They come in 7-10 lb packages and are great for making stock for the winter!  Backs are how we say thank you for being a co-producer of Castlemaine Farm.

 

What’s Happening on the Farm

 

Wow… so here we are 25 weeks later. It’s a bittersweet moment – while I’m excited to get things going for next year, I’ve been having a great time this year getting to know you all and providing you and your families with farm-fresh produce. This was our first season having a CSA program, and all in all, I think things went well. Of course, there is always room for improvement, it’s a fun challenge, and I love every minute of it! So as we wrap things up for this year, I will be interested in hearing your comments and feedback (both positive and negative of course). The only way to make this CSA program better is if I know how its working for you all. And of course, we’d love to see every one of you next year as well!

 

We have provided the sign up sheets for next year, they’re in your bags (bags this week so you don’t have to store those pesky wax boxes all winter!). Since you all have first priority, we would like to know who is going to sign up for next year by November 15th. (No payment is due until January, just your intention) that way we can start advertising to others who may want to join. You can let me know by email, phone, whatever works best. We are also offering a chicken CSA program too… that info is also in your bag this week. All the information is also on our website.

So as we wrap up for this season, we are still waiting for some rain. The rain will help us get the fields ready for fall and winter cover crops, and will also allow us to get more of the pasture turned over (at least another ½ acre) so we have more garden area for next years veggies, which means more fun stuff! Many of you know that we have planted 700 strawberry plants, hopefully we will have plenty of the yummy fruits in late April/ early May for everyone to enjoy! We also have plans for sweet potatoes, more melons, and even sweet corn! As always, we will have more interesting varieties of tomatoes (I always need to try at least 2 new varieties every year. The seed catalogs can  be so tempting!!) There are few other ideas up my sleeve, so we’ll see if Mother Nature can accommodate with plenty of gentle rain soon.

 

I wish I could provide more pictures of the farm for you all to see whats going on (it’s a little brown and dry…) but our digital camera is out of commission. Stay tuned this winter to our website, we’ll get back into the groove of updating it with pictures!
